KITCHEN

The hospital’s kitchen is staffed by nine women who prepare and distribute three meals per day for all inpatients. The meals are included in the daily fee which is 25 birr (2 €) for the first day and 15 birr (1 €) for the following days.

The basic food is “budena” (“injera” in Amharic) - the typical Ethiopian bread baked of tef, a crop which grows naturally only in Ethiopia. The budena is served with tea for breakfast and with a stew for lunch and supper. The stew is made on beans or lenses. Meat has now become so extremely expensive that it is served only at very special occasions, at a few important holidays.

The kitchen also serves the hospital staff tea and budena for tea brake daily and meals for the staff on duty. Depending on the number of inpatients the kitchen prepares up to 300 budenas a day. The stove is still fired with wood, but the budena is now mostly baked with electric ovens in an attempt to diminish the consumption of firewood. The traditional oven (“metat”) which is made of clay and fired with wood is however still used at high peaks.
